Hazelnuts (filberts) have somewhat thick, slightly bitter skins, and the nuts are often roasted and skinned before being used in recipes.
Preheat the oven to 350 degrees F. Spread the nuts in a single layer on a baking sheet with sides. Roast them for about 15 minutes, or until they begin to smell toasted and the skins are splitting.
Remove the hazelnuts from the oven, let them cool briefly, then rub them in a clean, dry kitchen towel to remove the skins. It’s not possible to remove all the skins; you just want the nuts mostly skinned.
Let cool completely, then use in recipes as directed.
